It is impossible to create an equally sweet Dry every year.
We are tied to nature and its cycles that, with its rainy or sunny days, offers us grapes with a higher or lower sugar concentration.
Unlike the other DOCGs, the Dry is more sensitive to climatic factors: therefore, we have to be more careful in the selection of the bases and in the gentle pressing of the grapes. For this wine, we choose only the flower of the must.
